Anyone else excited when paneer cheese got added to the Slimming list?

Well I certainly was, I love paneer based dishes and one of my all time favourites is Matar Paneer - so I just had to come up with my own Slimming friendly version.

Usually in this curry paneer is fried in copious amounts of oil or ghee.

Before you go thinking well can I not just use spray oil?

Well, you could but you won't get the same results, trust me. The paneer cheese really does need the oil to get that lovely sear on the outside and why compromise that, which is not too high once divided up.

You will notice in my recipes that I rarely compromise on ingredients to ensure that the food tastes good, it's all well and good omitting things. It's all about moderation. Keep it real, by eating real foods.

How can I add a ⅓ vegetables (healthy vegetables) to this Matar Paneer Curry?

As well as the onion and tomato included in the curry, I also served with some roasted cauliflower which naturally reduced my portion of rice and curry.

If you wanted to increase those veggies even further, you could swap out the Sweetcorn Pilau Rice for some Roasted Cauliflower Rice.

Healthy Matar Paneer Curry

Healthy Delicious Matar Paneer Curry - a yummy paneer Indiancheese and pea curry with rich flavours.

Ingredients

  • 360g of paneer cheese, cubed
  • 1.5 tbs of ghee (or can use another oil of choice)
  • 1 onion, finely diced
  • 3 cloves of garlic, crushed
  • 2 teaspoon of freshly grated ginger
  • 2 teaspoon of cumin
  • 1 teaspoon of turmeric
  • 1 teaspoon of chilli powder (I use deggi mirch)
  • 1 teaspoon of coriander
  • 1 teaspoon of salt
  • 4 whole cloves
  • 4 green cardamom pods
  • 1 cup (240ml) of crushed tomatoes (or 1 cup of passata with 1 tbs of tomato puree/paste)
  • 2 cups (480ml) of water
  • 1.5 cups (220g) of frozen peas

Instructions

  1. Heat the ghee in a pan over a medium high heat, once hot add the paneer cheese and fry until golden.
  2. Remove with a slotted spoon and set aside.
  3. Add the onion and fry for a couple of mins until translucent and softened.
  4. Add in the garlic and ginger and fry for a minute just to infuse flavour.
  5. Add in the salt, cumin, chilli powder, coriander, turmeric, and cook until paste like.
  6. Add in the crushed tomatoes, cardamom, cloves and water
  7. Return paneer to the pan, bring to a bowl, then reduce heat and simmer for 10 minutes, add the peas in for the last 3 minutes.
  8. Serve and enjoy!!

    Where do the whole cloves and cardamom pods come into the recipe? They are in the ingredients list but are not mentioned in the instructions?
